Hummus Spaghetti

Yes, you read that correctly. Hummus as pasta sauce is delicious. Don't knock it until you try it!

This is a vegan recipe, but you can swap the vegan chicken for a protein source of your choice.

Ingredients (3 servings):

  • 12 oz bag of frozen chopped spinach

  • 1 box of No Evil Comrade Cluck Chicken

  • 8 oz of Simple Truth garlic hummus

  • 8 oz of sliced baby bella mushrooms

  • 1 box of Banza spaghetti

Instructions:

Cook the pasta according to the instructions on the box.

While the pasta cooks, add the mushrooms, frozen spinach, and "chicken" to a large sauce pan. Cook for a few minutes (until the spinach begins to thaw), and then add the hummus.

Continue cooking until the hummus turns into a creamy sauce texture.

Strain the spaghetti and separate into three servings. Divide the sauce evenly among the three bowls.
