EGG, SAUSAGE, “mcmuffin” MAGIC

I’m currently eight weeks into contest prep, and let me tell you I damn near drool every time I eat this meal. It’s my favorite kind of recipe - no prep work, one pan, and delicious.

Ingredients (2 servings):

  • 2 Sandwich Skinnys, or the bread of your choosing

  • 2 Good Plant Smoked Gouda wedges

  • 1 package of Hodo All-Day Egg Scramble

  • 6 Field Roast Apple & Maple sausages

  • Optional: spinach & your choice of fruit

Instructions:

Chop or break apart the sausages into small pieces.

Throw the Hodo eggs, spinach, and sausage in a pan and cook until sausages are slightly browned and eggs are at desired texture.

Toast your bread while the pan is doing it’s thing.

Top your bread with half of the pan. Save the rest for later or share it!

Break apart the cheese wedge to top. Let’s be honest, vegan cheese doesn’t melt well, but this little wedge packs a ton of additional flavor and texture.
